Hi Daniel,
You can do this by just doing the svn co command and then creating a tar.gz of the Observium directory and using it as if it’s the CE tar.gz from the CE upgrade instructions.
You can upgrade the svn version on the connected system and continue to create .tar.gz and moving them to the airgapped system.
It should be quite straightforward!

I purchased a professional subscription today. I have an offline network. If I make a new installation of ubuntu with Observium Professional on a computer connected to the Internet, and then move the virtual machine to the offline network, will this professional edition work in the offline network? will there be any problem with the operation?

You can just follow the same method of doing the CE upgrade (replacing the directory and moving the config and rrd over), but instead of using a new CE .tar.gz, you use an Observium folder checked out on another system with internet connectivity and copied over.
Only the MySQL database, config.php and rrd directory need to be retained.
