Are you running the latest version of IOS?
Likely they haven't bothered populating CISCO-ENTITY-SENSOR-MIB.
Just because the sensor is mentioned in ENTITY-MIB doesn't mean they have a corresponding entry in the sensors mib!

I am however missing graphs for optics SFP modules. I can see the sensors in snmpwalk:

And I can see the sensors listed in inventory page in observium. There are however no values or graphs on the health page.
