It's perhaps a little confusing that "sensor" is an entity rather than "temperature", but that's just a reflection of the fact that all sensors are stored the same way internally.
You could make an alert without specifying temperature, and it would just work for all sensors. It'd probably not work for 'state' sensors though, so you'd probably have to exclude those.
@sensor_limit refers to the threshold you can see/set on the sensor pages. It's autopopulated by Observium with 'sensible' values, and allows you to globally monitor * with a single checker.
