What happens inside rrd is something akin to voodoo. On longer time period graphs it'll give you an average for whatever measurement period that graph is using. These are calculated by rrd, we have no input there beyond defining the number of measurements for each measurement period length the rrd will hold.
I'm not entirely sure without digging out something with the graph you're looking at, which I don't have at the moment!

For example, the 1-year graph says there is 1 client currently connected, but the 6 hour graph says it's 0. I'm guessing the longer-term graphs are averaged over a particular time frame, but I don't know what it's using for time units.
