I assume you would want this if you have multiple interfaces present in the same subnet and want to specifiy which address Observium will source its snmp-querys from?
And yes you can do this by specifying the clientaddr-parameter in snmp.conf on your Observium-machine
You can read more about it with "man snmp.conf"

If you want to make it the easiest way, just create a static route to the device via gateway on eth0
