Just restore your RRD-files from backup and Observium will start to populate them with new data. You will get a small hole in the graphs where the server was offline but it will soon smooth out with the average.

So what happened was the power to the Ob server failed in weekend and was stuck in bios prompt when I got to work. I brought it up. Later I noticed that all the graphs were empty. I checked and saw that the date/time was set to Feb 2019 not sure why. I then synced the time. The old graphs are gone. The new usage are being populated. How would I start fixing this? My server spec is as below:-
