I'm not sure if I got your point :) Casa c2200 CMTS does respond with 64bit counters, for example:

# snmpget -v2c -c xxxx 1.1.1.1 IF-MIB::ifHCOutOctets.77 IF-MIB::ifHCInOctets.77 IF-MIB::ifHCOutOctets.77 = Counter64: 2351994689934 IF-MIB::ifHCInOctets.77 = Counter64: 319195830460

I was wondering if it's possible to force Observium to query those.

If you make the device reply with 64bit counters, we'll happily use them.

That includes using v2c/v3, as v1 does not do HC counters!
