Go to the device page and click the little cog or gear icon in the top right corner. You can re-enable polling and discovery there.

The device page of the host that I've disabled? Sorry not following. I can't seem to find the host in question's page. Is there a generic 'device' page i'm not aware of?

Once I faced the same thing. It's not listed in the device page after you disable it.
If you remember the host id, just go to http://<your host>/device/device=<device_id>. you will be able to find the gear icon Chris speaks of here. Re-enable the device.

You could find the device ID from the DB if you don't remember it.

Adam's mail has the correct solution, but completeness on the device page you can give it the hostname instead of the device_id as well.
