I'm monitoring a little over 600 devices with my installation. Likewise in a VM, 8x vCPU @3.0GHz, 32GB DRAM, and 32GB of swap. While CPU goes up to 85+% during polls, I don't have any drops whatsoever. Given what you describe, you probably want to add more memory to your VM. Also, what is your average and overall polling time? You may need to add additional polling instances so that everything completes within the 5min window before the next round of polling starts,  which again means more memory will be very helpful.
