I can't seem to locate anything in the doco that helps, happy to refer to that if it exists.
Failing that, I have a device name that I'd like to change the name of to reflect a configuration change. Is it possibly to modify the name of the firewall in this case without dropping all of the captured stats etc?

With the rename_device.php script from the cli. You can't easily do this from the web ui because we can never guarantee that apache can write to the RRDs.
root@zeta:/home/observium/dev# ./rename_device.php Observium 17.6.8667 Rename Device
USAGE: rename_device.php <old hostname> <new hostname>
OPTIONS: -p Skip icmp echo checks, device renamed only by SNMP checks
DEBUGGING OPTIONS: -d Enable debugging output. -dd More verbose debugging output.
