I’ve setup alerting via XMPP, which works just fine for any chatuser-recipient, but it seems like sending notifications into a chat-room (e.g. room@conference.example.net mailto:room@conference.example.net) is not supported. Any hints if it’s possible to get it running or an implementation is planned?

I'd recommend looking at the XMPP notification output code and seeing if you can add support for it. It's unlikely we'll be able to do it, since none of us have XMPP familiarity, and it's not been requested from anyone else.
Unless it's super easy, but it's difficult to know that without spending ages looking at the API :D
